Recipe(tried): Koek (Dutch Honey Cake)

Misc.

Jerry, there are many different Koek recipes around. We live in a Dutch community and I think many of us make a variation of this Koek. As it's actually time to call it a day, I'll just post the one I make. See whether this one sounds familiar. We bake it in a loaf pan, and when we slice it up, yes, we usually spread the slices with butter or margarine. Some people put mixed peel in theirs, but I don't because my husband doesn't like it that way. Some people, like my mother, even put this cake between their sandwiches, like you'd put jam, or peanut butter, or whatever. So, here is one recipe, for starters.

Koek:
1/2 c. margarine (or butter)
1/2 c. granulated sugar
1 c. golden syrup (I use Roger's Golden)
2 eggs
1 1/2 c. hot water
2 tsp. baking soda
1 tbsp. molasses
3 c. flour
1 tsp. cinnamon
1 tsp. ground cloves
1 tsp. powdered ginger
1/2 tsp. nutmeg
1/2 tsp. salt
1/2 tsp. baking powder

Cream margarine (butter) with sugar, syrup and eggs. Mix water, b.soda, and molasses. Combine dry ingredients in a separate bowl. Add wet and dry ingredients alternately to the creamed mixture. Bake in a greased/floured loaf tin in a pre-heated oven at 300 degrees F. for about an hour or until it tests done.

Perhaps in the morning I'll post some more. I have several recipes here.
