Korean Stir-Fried Beef

1 lb flank steak; cut into thin strips across the grain
4 each green onions; cut diagonally into 1-inch pieces
2 tablespoons oil
3 each cloves garlic; minced
1 pinch each pepper and hot pepper flakes
1/4 cup soy sauce
1/4 cup dry sherry or beef stock
4 teaspoons granulated sugar
1 tablespoon toasted sesame seeds
1 tablespoon cornstarch
1 tablespoon water
Heat oil over high heat, in wok, until just starting to smoke. Stir-fry beef, garlic, pepper and hot pepper flakes for about 2 minutes or until beef is slightly pink. Add green onions, soy sauce, sherry, sugar and sesame seeds; bring to boil. Push meat to side of wok. Blend cornstarch with water; add to liquid in centre of wok and cook, stirring, until thickened. return meat mixture to sauce; toss to glaze.
