Last night for dinner I fixed Lasagna Rolls and served them with a tossed salad and iced tea. I know I have previously posted the recipe, but since we have several new people on the board I will post it again. This is a great recipe for lasagna that tastes almost as good as the real thing, but really cuts down on prep time. We still have regular lasagna, but not nearly as often as I serve these rolls. I hope everyone has a good day.
Lasagna Rolls
1 pkg. lasagna noodles, cooked according to package
1 lb. ground chuck, browned (*you can brown with green peppers, onion, and garlic if you want, really adds to the flavor)
1 cup mozzarella cheese
1/2 cup Parmesan cheese
1 jar spaghetti sauce or your homemade sauce (I love to use homemade sauce in these as they are really good with it, but jar works really well.)
1. Combine cooked chuck and spaghetti sauce in pan or in microwavable bowl. Heat until warm and bubbly. (This cuts down on cooking time in oven).
2. Lay noodles flat down on clean surface (I usually line counter with foil or wax paper).
3. Layer each noodle with sauce mixture and sprinkle parmesan cheese and mozzarella cheese on top. Make sure to leave enough room to roll up without all the filling falling out.
4. Roll each noodle up into a ball, and place in baking dish that has been sprayed with cooking spray.
5. Cover with remaining sauce and heat at 350 for about 30 minutes or until bubbly. Remove from heat and sprinkle with remaining cheeses. Let sit about 5 minutes and serve.
