PRINCE STUFFED SHELLS
1 pkg. Prince Shells (jumbo pasta shells)
1 1/2 lb. ricotta cheese
1/4 lb. mozzarella cheese, shredded
1/3 cup grated parmesan cheese
2 eggs, slightly beaten
1/4 cup chopped fresh parsley
1/2 tsp. salt
2 jars (1 pint each) Prince meatless spaghetti sauce (4 cups)
Add 1 tablespoon of salt to 4 quarts of rapidly boiling water. Gradually add shells so that water does not stop boiling. Boil, uncovered, 15 minutes. Stir occasionally. Drain portion of water, allowing shells to remain in warm water.
Mix cheeses, eggs, parsley, and salt.
Remove one shell at a time from warm water. Stuff each shell with mixture, using tablespoon.
Pour one pint jar Prince Sauce into large shallow casserole. Arrange stuffed shells in casserole. Add second pint of sauce.
Cover and bake at 375 degrees F for 30 minutes.
