I looked at several recipes for the orange peel and the one that was easiest actually takes a while.
1- soak 2 cups of orange peel overnight in water (enough to cover). Use a plate to weigh down the peels as they float on the surface.
2- drain it, then add more water and bring to a boil. Drain again. Repeat the draining and boiling 3 times to remove bitterness. This actually goes pretty quick.
3- combine 2 cups sugar with the orange peel, and about a quarter cup of water. Cook slowly until the peels are translucent. Drain the syrup off.
Here is the lazy part. Instead of dipping each individual piece of peel in chocolate like you'd buy from a canymaker, we just mixed the lot into melted chocolate and spread it to cool on a piece of wax paper- similar to peanut brittle or almond bark. Put it in the freezer to cool it down quicker if you want, then cut it into pieces to store.
The result is very tasty, if not as pretty as nice little sticks.
