Recipe: Lazy Daisy Cake

Lazy Daisy Cake
CAKE
1/3 cup milk
1 T. butter
1 c. sifted cake flour
1/2 t. salt
1-1/4 t. baking powder
2 eggs
1 cup sugar
1 t. vanilla
FROSTING
3 T. butter
1/3 cup brown sugar
2 T. cream
1/2 t. vanilla
1/2 to 3/4 cup coconut
Scald milk, add butter and cool to lukewarm. Sift flour, salt and baking powder together. Beat eggs slightly and add sugar gradually, beating constantly until thick and lemon colored. Add vanilla. Add sifted dry ingredients and milk alternately in small amounts, mixing lightly but thoroughly. Pour into greased pan and bake in moderate oven (350) for 30 minutes.
Combine ingredients for frosting in order listed. Remove cake from oven, cool for 5 minutes. Spread frosting evenly over cake, using 2 forks. Place under broiler heat until coconut is delicately browned. Makes 1 8" cake.
LAZY DAISY SPICECAKE - Add 1/4 t. each of cinnamon and nutmeg and 1/8 t. cloves to flour.
