SPICY BEER-BRINED PORK LOIN
3 pounds boneless pork loin
1 (12 ounce) can preferred beer
1/2 cup dark corn syrup
1/2 cup onion, finely chopped
1/3 cup prepared mustard
1/3 cup olive oil
1 to 2 tablespoons chili powder
2 garlic cloves, minced
Place pork in large resealable plastic bag.
In a medium mixing bowl, stir together beer, corn syrup, onion, mustard, olive oil, chili powder and garlic. Pour mixture over pork; seal the bag and toss gently to coat pork. Refrigerate 4 to 24 hours.
WHEN READY TO COOK:
Prepare the grill.
Remove pork from the marinade and reserve for basting.
Grill pork over indirect medium heat, basting every 10 minutes with reserved marinade, for about 1 hour, or until the internal temperature reads 150-155 degrees. After removing pork from the grill, let it rest for 10-15 minutes before slicing.
