Recipe: Lazy Doughnuts (baked in a muffin pan)

Breakfast and Brunch
LAZY DOUGHNUTS

2 tablespoons plus 1 1/2 teaspoons shortening
1/2 cup sugar
2 eggs
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
6 tablespoons milk
Butter or margarine melted
Cinnamon-sugar

In a mixing bowl, cream shortening and sugar. Add eggs, one at a time, beating well after each addition.

Combine flour, baking powder, nutmeg and salt; add to creamed mixture alternately with milk. Fill greased muffin cups 2/3 full.

Bake at 350 degrees F for 18 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.

Dip doughnuts in melted butter, then roll in cinnamon-sugar. Serve warm.
