Recipe: Ambrosia Pancakes with Maple-Orange Syrup (using pancake mix)
Breakfast and BrunchAMBROSIA PANCAKES
1 cup pancake mix
1 cup milk
1 egg
1 tablespoon melted shortening (or oil)
1/2 cup flaked coconut
1 teaspoon grated orange rind
FOR SERVING:
1 1/2 cups maple syrup
2 medium oranges, peeled and diced
Combine the pancake mix, milk or water, egg and shortening until just moistened. Stir in coconut and orange rind.
Bake on a greased hot griddle, using 1 tablespoon of batter for each pancakes. Keep warm until ready to serve.
Combine the syrup and diced oranges. Heat and serve warm with pancakes.
Makes 4 servings
