Recipe(tried): Leftover Pork...make pork tacos...
Misc. assuming it isn't highly seasoned with something that clashes, try shredding or chunking and brown with chopped onion and garlic. Put in taco shells, and add diced tomatoes, and thinly sliced romaine lettuce. Top with shredded jack cheese and bake them for about 5 minutes at 350*, or just until cheese softens. I use a platter that has built in holders for the shells, but you can stand them in a shallow baking dish that is just big enough to hold them. I know it sounds odd to heat with the lettuce on them, but they are delicious. From a Jane Butel Mexican cookbook.
