Recipe: Barley Swiss Steak

BARLEY SWISS STEAK

1 (1/2-inch thick) top round steak (about 1 1/4 lb.)
4 tablespoons all-purpose flour
2 tablespoons vegetable shortening
1 (28 oz.) can tomatoes, undrained
1/2 cup chopped celery
1/2 cup Quaker Pearled Barley
1/4 cup chopped onion
1 teaspoon salt
1/8 teaspoon pepper

Trim fat from meat. Place on well floured cutting board. Sprinkle meat with 2 tablespoons flour; pound flour in with meat mallet. Turn; pound in remaining flout Cut meat into 4 to 6 pieces.

Melt shortening in large skillet. Add meat; brown on both sides over medium heat. Remove from skillet.

Combine remaining ingredients; add to skillet. Place meat on top.

Cover; simmer about 1 hour and 15 minutes or until meat and barley are tender.

Makes 4-6 servings
