Recipe: Raisin-Nut Bran Muffins

RAISIN-NUT BRAN MUFFINS

1 cup whole-bran cereal
1 cup all-purpose flour
1 cup walnuts, chopped
1/2 cup dark seedless raisins
1/4 cup sugar
1 tablespoon double-acting baking powder
1/2 teaspoon salt
1 egg
1 cup milk
1/4 cup salad oil

Preheat oven to 400 degrees F. Grease twelve 2 1/2-inch muffin-pan cups.

In medium bowl with fork, mix first 7 ingredients.

In small bowl with fork, beat egg slightly; stir in milk and oil; stir egg mixture into flour mixture just until flour is moistened. Spoon batter into muffin-pan cups.

Bake 25 minutes or until golden and toothpick inserted in center comes out almost clean. Immediately remove from pan.

Makes 12 muffins
