STREUSEL BRAN MUFFINS
FOR THE TOPPING:
3 tablespoons all-purpose flour
2 tablespoons firmly packed brown sugar
1 tablespoon margarine
FOR THE MUFFINS:
1 1/4 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 1/2 cups Kellogg's Bran Flakes Cereal
3/4 cup nonfat milk powder
1/2 cup firmly packed brown sugar
2 egg whites
1/4 cup vegetable oil
1/2 teaspoon vanilla
1/2 cup seedless raisins
Preheat oven to 400 degrees F. Coat the cups of a 12-cup muffin pan with nonstick cooking spray.
TO MAKE TOPPING:
Combine flour and sugar in a small bowl. Using pastry blender or fork, cut in margarine until mixture resembles coarse crumbs.
TO MAKE MUFFINS:
Stir together flour, baking powder, salt, cinnamon and nutmeg.
In large mixing bowl, combine cereal and milk. Let stand about 3 minutes or until cereal softens. Add brown sugar, egg whites, oil, vanilla and raisins. Mix well. Add flour mixture, stirring only until combined. Portion batter evenly among prepared muffin pan cups. Sprinkle with topping.
Bake about 20 minutes or until lightly browned.
Makes 12 muffins
