Recipe: Lemon Cheese Cake Bars (using cake mix, not using frosting mix)
Desserts - Cookies, Brownies, BarsHi! I haven't tried this recipe that I found in my old files - it looks just like the Easy Cheesy Lemon Bar recipe, except it doesn't use lemon frosting mix. Happy Baking! Betsy
LEMON CHEESE CAKE BARS
1 (2-layer-size) pkg. lemon cake mix
3 eggs, divided use
1/3 cup butter, softened
1 (8 oz.) pkg. cream cheese, softened
1 cup powdered sugar
2 tbsp. lemon juice
Heat oven to 350 degrees.
Combine dry cake mix, 1 egg and butter and press into a 9x13-inch baking pan.
Beat cream cheese until smooth. Gradually add powdered sugar, stir in lemon juice until smooth. Reserve 1/2 cup of the cream cheese mixture in refrigerator (to use for frosting).
Beat 2 eggs into remaining cheese mixture and spread over cake mixture.
Bake for 25 minutes or until set. Cool completely.
Spread on reserved cream cheese mixture. Refrigerate until firm, then cut into squares.
VARIATION:
If desired, 1/2 to 3/4 cup thawed Cool Whip can be folded into the frosting mixture.
