CAVATELLI AND BROCCOLI
4 cloves garlic, minced
3 tablespoons olive oil
28 ounces chicken broth
1 pound frozen cavatelli pasta
4 cups chopped broccoli
1 tablespoon chopped fresh basil leaves (or 1 teaspoon dried basil leaves)
1/2 cup chopped roasted red pepper
salt and pepper (to taste)
grated parmesan cheese (to serve)
In 4-quart saucepan, saute garlic in oil until tender.
Stir in chicken broth; heat to a boil. Add pasta; heat to a boil. Reduce heat; cover and simmer for 5 minutes.
Add broccoli; cook 10 minutes more or until pasta and broccoli are tender.
Remove from heat; stir in basil and roasted red pepper. Season with salt and pepper.
Serve with Parmesan cheese.
