Recipe(tried): Lemon Pepper Chicken Breasts, Smashed Garlic Potatoes, Asparagus, Salad, and Fruit Parfait (serves 2)

Rachel Ray has nothing on me! She can cook a meal and serve it in 30 minutes...well, I can do the same in 20 minutes! It takes exactly 20 minutes to make rice or potatoes. It's easy and this is how you do it...while the rice or the potatoes are cooking, you put the chicken in the oiled skillet with your ingredients and/or seasonings and cook. You also put your vegetables to cook, the bread in the oven and you busy yourself making the salad, you are multi-tasking by taking care that chicken does not burn as the delicious aromas waft all thru your kitchen! It's easy and anyone can do it! Enjoy!

Lemon-Pepper Butterflied Chicken Breasts
Smashed Red Potatoes with Butter and Sour Cream
Fresh Steamed Asparagus

LEMON-PEPPER BUTTERFLIED CHICKEN BREASTS
serves 2
2 boneless, skinless chicken breasts
1 lemon, sliced in half
Grill-Mates lemon-pepper seasoning
garlic powder
Grill-Mates Montreal chicken seasoning
seasoned salt
1 Tbsp. olive oil
Butterfly chicken breasts. Season with seasonings on both sides and squeeze one half of lemon over chicken.
Heat oil in skillet over medium heat, place chicken in skillet and brown well on one side. Flip over and squeeze other half over and continue browning until done.
SMASHED RED POTATOES WITH BUTTER AND SOUR CREAM
serves 2-4
4 medium size red potatoes, washed and cut into chunks
1 garlic clove
2 to 3 Tbsp. sour cream
2 to 4 Tbsp. butter
salt and white pepper
Boil potatoes and garlic clove in water til tender. Drain and return to pot. Add sour cream, butter and seasonings and mash.
FRESH STEAMED ASPARAGUS
serves 4
fresh asparagus
lemon-pepper seasoning
1/2 fresh lemon
In a steamer, place fresh, washed and trimmed asparagus. Season with lemon-pepper and squeeze lemon over them. Steam for about 10 minutes or less til crispy-tender.

In a wine glass, place the fruit, let one scoop of vanilla ice-cream melt in a bowl and drizzle that over the fruit.
