Recipe(tried): Lemonade Cake

This is one of my most favorite recipes -- it's WONDERFUL for a ladies birthday cake or shower.

LEMONADE CAKE

18 oz white cake mix
8 oz sour cream
6 oz. frozen lemonade thawed
3 oz. cream cheese, room temp.
3 eggs

Beat 4 min @ hi speed -- AN ABSOLUTE MUST!! Pour into a greased tube pan, or 2 greased 9" layer pans, or 9" x 13" greased sheet cake pan, and bake at 350 'til done (depends upon the size of the pans -- check the cake box for more specific times).

Let cool in the pan 10 min., then carefully remove from pan(s). Let cool COMPLETELY to room temperature (45 min - 1 hr.) then chill in the fridge. Slices much better when chilled.

To make a frosting for decorating, make a regular butter cream frosting, except use lemonade concentrate in place of the water or milk.

To make a whipped frosting, whip 2 cups of whipping cream with 2 TB sugar and 1/3 C. thawed lemonade concentrate 'til fluffy. Use immediately.
