Lettuce Bread
1 1/2 cups sifted flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 cup sugar
1 1/2 teaspoons grated lemon zest
1 cup chopped lettuce
1/2 to 1 cup chopped walnuts
2 eggs
2/3 cup corn oil
Preheat oven to 350 degrees F.
Mix flour, baking powder, soda, sugar and lemon zest together. Add chopped lettuce. Set aside.
Combine eggs and oil, mixing well. Fold into dry ingredients just until dry ingredients are moistened. Fold in walnuts, do not overmix. Pour into two ungreased loaf pans.
Bake for about 1 hour.
Good breakfast bread with coffee.
