Recipe: Light and Cheesy Drop Biscuits

Breads - Assorted
LIGHT AND CHEESY DROP BISCUITS

2 cups all purpose flour
2 teaspoons baking powder
3/4 teaspoon salt
1/4 teaspoon baking soda
2 1/2 tablespoons shortening
1 cup buttermilk
1/4 cup finely shredded cheddar cheese
1 1/2 teaspoons dried parsley, optional

Combine flour, baking powder, salt, and baking soda. Cut in shortening. Add buttermilk, cheese and parsley. Stir until flour is just moist.

Drop by heaping tablespoons onto pan coated with nonstick spray.

Bake in a preheated 400 degrees F oven 12-15 minutes.

Makes 15 biscuits
