LIGHT AND EASY CAKE MIX COOKIES
1 (2-layer size) yellow, white or lemon cake mix
2 tbsp. water
2 eggs
1/2 cup vegetable oil
1 tsp. extract (vanilla, almond, coconut, orange or lemon)
1/2 cup finely chopped pecans
Confectioner's sugar
Preheat oven to 350 degrees F. Lightly butter baking sheets or cover with parchment paper.
Mix all ingredients, except confectioner's sugar, together.
Drop teaspoonfuls of batter into confectioners' sugar. Roll it and form a ball with the dough. Place on prepared baking sheets.
Bake at 350 degrees F for 8-10 minutes.
