Cilantro-Lime Salad Dressing

Makes 2 cups
This dressing is particularly good on a grilled chicken salad. Originally from The Treasury of Creative Cooking
Karen Haigh & Rob Driskill
2 tablespoons lime juice
2 tablespoons vinegar
1 cup olive oil
1 small bunch cilantro
1 clove garlic
2green onions
salt and pepper, to taste
Pour lime juice and vinegar into food processor or blender. With processor on, slowly pour in olive oil. Add remaining ingredients and process until smooth.
Lime-Cilantro Dressing
Makes 1/2 cup
1/2 cup olive oil
juice of 1 lime
4 garlic cloves, peeled, ends removed
1/2 cup cilantro -- wash, dry
fresh ground black pepper
1/4 tsp sugar -- to taste
1/8 tsp salt -- to taste
In a food processor fitted with a metal blade, combine the olive oil, lime juice, garlic, cilantro leaves, and black pepper. Process until smooth. Add sugar and salt to taste. Chef Pete
