Maybe you could use this and substitute lime for the balsamic vinegar. I also added another salad dressing that you might like.* Exported from MasterCook *

Cilantro Dressing

Amount Measure Ingredient -- Preparation Method

Cilantro Dressing--drizzle over chicken

1 bunch of cilantro, finely chopped
1 green chili pepper, seeded and finely chopped
1 tablespoon basalmic vinegar
1/4 cup canola or vegetable oil
1/4 cup water

Combine ingredients in a bowl. - - - - - - - - - - - - - - - - - - -
Jalapeno-Lime Creme Dressing

1 cup plain yogurt or 3/4 cup sour cream with 1/4 cup milk whisked in
1 or 2 jalapeno peppers, minced
1/4 cup chopped cilantro
2 tsp. fresh lime juice
1/2 tsp. grated lime peel

Whisk or shake in a jar.
