This is delicious. I didn't have enough zest as they were older limes, so I made just half the recipe substituting 1/4 cup of water for extra lime juice. And by mistake instead of using 1/2 the package of pectin I used the whole package. But I think it improved it as it made it a fairly thick jelly. Spread between two cookies and iced is a great way to use the jelly.
