Recipe: Seafood Burritos (make ahead)

SEAFOOD BURRITOS

1 (8 ounce) package frozen crab meat thawed, or 1 can well drained and flaked
1 (8 ounce) package cream cheese, softened
1/2 cup sliced black olives
3/4 cup salsa, plus for more garnish
1/2 teaspoon ground cumin
1/2 teaspoon salt
1 small ripe avocado, peeled, seeded and sliced into thin wedges
2 cups shredded lettuce
8 flour tortillas, warmed

In a large bowl, mix together crab, cream cheese, olives, salsa, cumin and salt. Chill for 2 to 3 hours or overnight.

TO SERVE:
Spoon 1/4 cup crab mixture down the center of each warmed tortilla. Top with avocado slices, shredded lettuce and additional salsa, if desired. Tuck sides in and roll up burrito-style.
