Canadian Living's Best Scone Mix
Yield: 15 cups
9 cups cake flour
1 cup nonfat dry milk powder
1/2 cup sugar
1/4 cup baking powder
1 tablespoon salt
2 teaspoons baking soda
1 pound shortening
In large bowl, combine flour, milk powder, sugar, baking powder, salt and baking soda. Using pastry blender, cut in shortening until mixture is in fine crumbs Transfer to airtight container; store in refrigerator for up to 2 months. Stir well before using.
Canadian Living's Best Scone Mix Golden Scones and Variations
3 cups Canadian Living's Best Scone Mix
2/3 cup water
In bowl and using fork, quickly stir Best Scone Mix with water until sticky dough forms. Turn out onto lightly floured surface; knead 6 times. Press into 1-inch thick round. Using lightly floured 2-inch round cutter, cut out circles, rerolling scraps once.
Bake on baking sheet in 450-degree oven for 10 to 12 minutes or until golden brown.
Scones can be individually wrapped and frozen in airtight container for up to 2 weeks.
Yield: 13 scones
Variations:
Cheese Scones--Add 1/2 cup freshly grated Parmesan or Cheddar cheese to dry ingredients.
Herb Scones--Add 2 tablespoons chopped fresh herbs or 2 tsp. dried herbs to dry ingredients,
Sweet Raisin Scones--Add 2 tsp. cinnamon and 3/4 cup raisins to dry ingredients.
