Linda's "Beat Menopause" Cake Recipe

This cake was developed by a woman in the United Kingdom who was tired of the side effects of hormone replacement therapy and who wanted to try to reduce her menopausal symptoms more naturally. Convinced that the phytoestrogens (substance that mimic estrogen) were the way to go she tried to formulate a recipe that would provide her with the optimal daily amount of soy and flax seeds. She and many women in her village had dramatic results from eating this cake, which led to her recipe book Linda Kearns Eat to Beat Menopause (HarperCollins $21.95). Try this for yourself!

LINDA'S BEAT THE MENOPAUSE CAKE

1 c soy flour
1/2 c flaked almonds
1 c spelt flour
2 pcs dried ginger finely chopped
1 scant cup rolled oats
1 1/2 c unsulphured raisins
1 Tbsp Malt extract
2 c soymilk
1/2 c flax seeds
1/2 tsp nutmeg
1/2 c sunflower seeds
1/2 tsp cinnamon

Put all dry ingredients in a large mixing bowl. Add the soy milk and malt extract, mix well and leave to soak for about 30 minutes. Heat oven to 375 degrees F. Line a small loaf pan with waxed paper. If the mixture ends up too stiff-it should have a soft dropping consistency, just too thick to pour-stir in some more soy milk. Spoon the mixture into the prepared pan and bake for 1 1/2 hours. Test with a skewer and if it is not cooked through, allow five to ten more minutes. Turn out on a wire rack. Eat in thick slices with soy spread. One slice contains the RDA of phytoestrogens.
