Recipe(tried): Lo Carb Chicken and Sausage

DH saw this recipe on NECN (New England Cable News) and decided it was a recipe to try. Billy Costa who used to be the Phantom Gourmet here in New England, showcased the recipe from Jeanne Azue-Padilla from the Water Street Cafe in Fall River, Massachusetts. We really liked it a lot. Whether or not it is low carb, I will leave up to you since we are not on the Atkins diet or any low carb diet. DH made this and I will note the changes he made in the recipe. I served it with steamed zucchini, a green salad and bread, which I'm quite sure made this meal anything but low carb.

Lo Carb Chicken and Sausage

2 boneless, skinless chicken breasts, sliced
4 links sweet or hot Italian Sausage
fresh garlic cloves roasted in olive oil till brown and soft
1 cello bag spinach (I had a bag of baby spinach, not a larger bag of regular spinach. DH said he would haved used more if we had had it so you may want to increase the amount of spinach to say a 10 oz. bag - no amount was given in the recipe. I think the bags of baby spinach are 6 or 7 oz.)
6 oz. sliced button mushrooms
2 sliced portabella mushroom caps
olive oil
black pepper
dried basil and parsley flakes, to taste (DH used fresh since we had fresh)
1/4 cup dry red wine
1 cup marinara sauce (homemade or your favorite jarred - DH used about 1 1/2 cups marinara)
lo fat shredded mozzarella and Parmesan cheeses (6 oz. - lots of cheese)

Heat olive oil in large saute pan, on medium high, add sliced chicken breast and sausage...cook through. (DH cooked both the chicken and sausage on the grill and set them aside.) Add mushrooms, roasted garlic, spinach, parsley, basil and black pepper. (DH sauteed these, then added the chicken and sausage.) Add wine, Mairnara sauce and stir to thicken consistency...remove from heat. Transfer to casserole, top with two cheeses and bake in prehaeated oven at 425 degrees F for 15 to 20 minutes until cheese is browned. Serve with your favorite salad.
