Appetizers and SnacksI think you are talking bout the flamedo. It is just montery jack cheese melted with chorizo piled on top. The flamedo it was called because they use to light it on fire and bring to the table, The greeks have a similar recipe without the chorizo called kasseri flmbe, It uses a kasseri cheese and pita breads.
