Menus Lobster Delight
This lobster dish can be made with other seafood if you like. We enjoy fresh lobster, especially during the summer months, and this recipe is wonderfully simple and tasty. Served with a rice pilaf and steamed summer squash, it makes for a delightful meal. Enjoy!
Serves 2
12 oz. lobster meat, cooked and cut in samll pieces
1/2 cup melted butter
1/2 cup bread crumbs (I use a mixture of plain crumbs with a handful of crushed garlic croutons)
1/2 cup parmesan cheese
3 Tbsp. finely sliced green onion, tops in cluded
1/4 cup melted butter or dry white wine
Juice from 1/2 lemon, freshly squeezed
Place cut lobster meat into a shallow baking dish, or individual casseroles. Pour 1/2 cup melted butter over the meat.
In a small bowl, mix together breadcrumbs, cheese, green onion, butter/wine, and lemon juice. Spread this topping over the lobster.
Bake uncovered at 350 degrees until topping is brown (roughly 15 minutes, as the lobster meat has already been cooked).
Recipe can be doubled in seafood without adding too much extra liquid.
