Recipe(tried): make ahead mashed potatoes

Side Dishes - Potatoes

Boil, mash, and whip 8 to 10 potatoes,
Add:
1 cup sour cream
8 oz. cream cheese
4 tbsp. butter
salt and pepper to taste

Add 1/3 cup chives (I don't use these, but is in the recipe)

Pour in butter casserole and sprinkle with parmesan cheese, I use cheddar or none at all.

These keep well and are as good heated up as they are freshly made.
