EASY BLENDER POTATO KUGEL
5 medium potatoes, cubed
1 large onion, diced
3 egg
1 1/2 tsp salt (optional)
1/4 tsp baking powder
1/4 tsp black pepper
1/4 cup margarine, melted
1/3 cup flour
Preheat oven to 350 degrees F. Lightly oil a loaf pan or 9-inch round cake pan. Preheat pan in oven.
Place all ingredients in blender and blend until potatoes are finely ground, or approximately 2 minutes. Pour into preheated pan.
Bake at 350 degrees F or until golden brown, about 1 1/2 to 2 hours.
When doubling recipe use 9x13-inch pan.
