This is the most delicious candied yams you will ever eat!!!! I got the recipe from my mother when I knew she was dying. No holiday would be complete without these!
Peel potatoes and cut into approximately 1 to 1 1/2 thick slices (do not have to be flat). Boil until JUST fork tender, approximately 15 minutes. Do not overcook.
Then mix together:
1 cup brown sugar
1 cup white karo corn syrup
1 cup white sugar
1 stick (1/2 cup) butter
1 tsp. each of vanilla, coconut, and orange extract
Bring this to a boil and pour over cut up potatoes (long flat baking dish).
Bake at 350 degrees for 45 minutes. Now enjoy a piece of Heaven
