Maple Oat bran Muffins with Raisins and Walnuts
These muffins are not traditional, but are an interesting combination of ingredients. An excellent muffin for breakfast.
2 eggs
1 cup sour cream
1 cup maple syrup
1 teaspoon pure maple extract
1 cup whole wheat flour
1 cup oat bran flakes
1 1/2 teaspoons baking soda
1 teaspoon baking powder
1 cup raisins
1/2 cup chopped walnuts
Beat together first 4 ingredients until blended. Mix together the remaining ingredients and add, all at once. Beat until dry ingredients are just blended. Do not overbeat.
Divide batter between 18 paper-lined muffin cups and bake in a 400 degrees F. oven for about 18 to 20 minutes, or until a cake tester, inserted in center of muffin, comes out clean. Allow to cool for 10 minutes, and then remove from pan and continue cooling on a rack. Serve warm. Yields 18 muffins.
