Cajun Honey Bran Muffins with Raisins and Pecans
These are luscious giant muffins, very spicy and flavorful. As they are baked in a low oven for a longer period of time, the tops are very crusty, but the crumb remains moist and delicious. Please note that these contain no butter.
2 eggs
1/2 cup sugar
1/4 cup molasses
1/4 cup honey
1 cup milk
2 teaspoons vanilla
1 1/2 cups flour
1 cup unprocessed bran flakes
2 teaspoons baking powder
1 teaspoon baking soda
2 1/2 teaspoons pumpkin pie spice
1 cup raisins
1 cup chopped pecans
Beat together first 6 ingredients until blended. Add the remaining ingredients, all at once, and beat until blended. Do not overbeat.
Divide batter between 12 paper-lined muffin cups and bake in a 300 degrees F. oven for 45 minutes or untio tops are crusty and browned, and a cake tester, inserted in center, comes out clean. Allow to cool for 10 minutes, and then remove from pan and continue cooling on a rack. Yelds 12 muffins.
NOTE: If you do not have pumpkin pie spice, then use 2 teaspoons cinnamon and 1/4 teaspoon, EACH, nutmeg and ground cloves.
