Raisin Bran Muffins with Apple and Orange
These are marvellous muffins, very moist and fruity. They are just bursting with flavor and goodness. Your children will love them...even though there isn't a hint of chocolate.
1/4 cup butter (1/2 stick)softened
1 egg
3/4 cup milk
1 apple, peeled, cored and grated
1 medium orange, GRATED. Use juice, fruit and peel.
1 cup all purpose flour
2 cups Raisin Bran Cereal
1 tablespoon baking powder
1 1/2 teaspoons cinnamon
1/2 cup sugar
Beat together butter, egg and milk until blended. Stir in apple and orange. Combine the remaining ingredients and add, all at once. Stir until dry ingredients are just moistened. Do not overmix.
Divide batter between 12 paper lined muffin cups and bake in a 400 degrees F. oven for 25 minutes, or until a cake tester, inserted in center of muffin, comes out clean. Allow to cool for 10 minutes, and then, remove from pan and continue cooling on a rack. When cool, drizzle top with Orange Glaze.
ORANGE GLAZE:
2 tablespoons grated orange
3/4 cup sifted powdered sugar
Stir together orange and sugar until blended. Add a little sugar or orange juice to make glaze a drizzling consistency.
