Recipe: Marriott Orange Muffins

MARRIOTT ORANGE MUFFINS

2 1/2 cups flour
2 tsp baking powder
1 tsp salt
1 cup butter, softened
1 cup sugar
4 egg yolks
1/4 cup orange marmalade
2 tbsp grated orange peel
1/2 cup orange juice
1/4 cup vegetable oil
4 egg whites

Preheat oven to 375 degrees F. Grease 24 (2 1/2 inch) muffin cups.

Sift flour, baking powder and salt together; set aside.

Beat butter and sugar in a mixer bowl; beat in egg yolks until light and fluffy. Beat in marmalade and orange peel.

Combine juice and oil and add alternately with the dry ingredients to the butter mixture until just blended; set aside.

In a clean mixer bowl, beat egg whites until stiff. Gently fold into the batter. Spoon into prepared muffin cups.

Bake 20 minutes or until golden. Cool on a wire rack.

Makes 2 dozen
