Recipe: Matchstick Melon Salad (using cantaloupe, jicama, mint, lime and honey)

Salads - Fruit, Gelatin
MATCHSTICK MELON SALAD

1/2 medium jicama, cut into julienne stripes (about 1 1/2 cups)
1/2 medium cantaloupe, cut into 1/2 cubes (1 1/2 cup total)
2 Tablespoon chopped fresh mint (or half as much dried mint)
1 teaspoon grated lime peel
3 Tablespoon fresh lime juice
1 teaspoon honey
1/4 teaspoon salt

Mix all ingredients in glass or plastic bowl. Cover and chill.

Makes 6 servings
