Recipe(tried): Matzoh Balls

This is the recipe that I have used for years.

MATZOH BALLS (Knoedel)

4 eggs
1/4 Cup carbonated water (Club Soda)
1/4 Cup plain water OR
USE 1/2 Cup all Club Soda (decrease amount of salt you use by 1/2)
1 cup Matzoh Meal (I loved the Horowitz Margareten) brand, but cannot find it here in Ohio
1/3 cup melted shortening (or rendered chicken fat) which I use
1 teaspoon salt (decrease by 1/2 if using all club soda)
dash of pepper

Add water and club soda, melted shortening, salt and pepper to the beaten eggs. Mix well.
Add matzoh meal and stir thoroughly.
Let stand for 20 minutes.
Form into balls and drop into soup; OR into boiling water, to which one tablesppon salt has been added.
Cook 20 minutes.
