MEAT LOAF TOSTADAS
4 (6-inch) corn tortillas
3 tbsp. vegetable oil
2 (1/4-inch thick) sliced cooked meat loaf
1/2 of a 16 oz. can refried beans (about 3/4 cup)
1 1/2 cups shredded lettuce
Bottled mild taco sauce
1/2 of a 4 oz. package shredded cheddar cheese
Heat oil in a skillet over medium heat and fry 1 tortilla at a time a few seconds per side until soft, blistered, and slightly browned. Remove to paper towels to drain; keep warm.
In oil in skillet brown meal loaf slices on both sides.
In small pan heat beans.
TO SERVE:
For each serving, place tow overlapped tortillas on a plate. Spread with half the beans, half the lettuce, one meat loaf slice, top with taco sauce, and sprinkle with cheese.
Makes 2 sevings
