Recipe: Meatloaf Parmigiana

You could probably replace the spaghetti sauce for pizza sauce. Then replace the Italian bread crumbs for plain. And since most pizza sauces have some cheese in them you could probably omit the cheese.

MEATLOAF PARMIGIANA

1 1/2 lb. lean ground beef
1/2 cup Italian seasoned bread crumbs
1/2 cup finely minced onion
1 tsp. salt
1/8 tsp. pepper
1/4 cup grated Parmesan cheese
1 1/2 cups spaghetti sauce
1/3 cup water

Combine ground beef, bread crumbs, onion, salt, pepper,
2 tablespoons Parmesan cheese and 1/2 cup spaghetti sauce; mix thoroughly. Form into loaf in shallow baking dish.

Bake at 350 degrees for 45 minutes; drain excess fat.

Pour on remaining spaghetti sauce mixed with water. Sprinkle with remaining Parmesan.

Bake 15 to 20 minutes longer.

Makes 6 servings
