Recipe: Melted Cheese and Corn Nachos

MELTED CHEESE AND CORN NACHOS

8 ounces tortilla chips
1/2 cup corn kernels, drained if necessary
2 tomatoes, chopped
4 scallions, chopped
4 tablespoons sour cream
salt and freshly-ground black pepper (to taste)
1/2 cup grated cheddar cheese

Preheat the broiler.

Spread the tortilla chips in a large, shallow flameproof dish and scatter with the corn kernels, tomatoes, and scallions. Spoon the sour cream over, season to taste, and sprinkle with the Cheddar cheese.

Broil for 2 to 3 minutes until the cheese melts and is bubbling. Serve at once.

"This literally takes minutes to make. Thawed frozen corn kernels, as well as the canned variety, can also be used. Or, if fresh corn is in season, scrape the kernels off the cob and cook them in a little water for about 5 minutes until they are just tender."
