Recipe(tried): Mexican Wedding Cakes

Misc.
The cookies your friend is looking for are called Mexican Wedding Cakes or Polverones. I didn't see that show and don't know if a specific recipe was given to go with the demonstration. Here's a recipe I've used to make them.

Susan

Polvorones (Mexican Wedding Cakes)
4 dozen

1/4 cup blanched almonds [can substitute pecans]
1/2 pound butter, softened
2/3 cup confectioners' sugar
1 egg yolk
2 cups flour
1 tablespoon rum
pinch salt
1/2 teaspoon grated lemon peel

Preheat oven to 325 F.
Toast almonds in a dry skillet until browned. {It is not necessary to toast pecans.] Grind finely (to a powder--not a paste) in a blender or nut grinder.
Using an electric mixer, cream butter and 1/3 cup confectioners' sugar together.
Beat in egg yolk.
Beat in half the flour until well-mixed.
Add next 3 ingredients, almonds, and remaining flour. Beat until smooth.
Pinch off bits of dough and roll into 3/4” balls. Place 2" apart on ungreased cookie sheets.
Bake 25 minutes. Let cool slightly, then roll in remaining confectioners' sugar.
