Recipe: Microwave Kiwi Jam

Preserving - Jams, Jellies
Microwave Kiwi Jam

1 1/4 lb. kiwi fruit
1/4 cup lemon juice
1/2 cup water
1 pkg (1-3/4 oz.) powdered pectin
4 cups sugar

Peel fruit with vegetable peeler. Slice fruit into a 4 quart bowl and mash coarsely with fork or potato masher. Add lemon juice, water and pectin; blend well. Cook on HIGH 10 minutes stirring every 3 minutes. Stir in sugar. Cook on HIGH 6 minutes, stirring every 2 minutes. Skim foam off top and ladle into clean, hot jars; cover with lids and let cool. Refrigerate or freeze. Makes 5 half pint jars.
