Recipe(tried): Minestrone Soup and Sole Stuffed with Lemongrass and Shrimp
MenusTonight, I made the veggies different than usual, by putting them into a soup.
I didn't really use a recipe. I had homemade stock (6 cups) in the freezer. So, I softened an onion, and some garlic, and a diced red pepper, and then added the stock. When the liquid came to a boil, I added the other veggies: yellow zucchini (2 6-inch babies from my garden, small dice), a handful of green beans, a rib of celery, a carrot, half a tin each of kidney beans and chickpeas, And about 1/2 cup of tomato sauce I had in the fridge. When the pot came back up to the boil from adding in the veggies, I add in 1/2 package of Lipton basil and tomato high fibre noodles. Usually, I would add in macaroni, but I did not have any small whole wheat anything, and I reasoned the Lipton side dish was close enuf! Oh, and I also added in some fresh spinach, ribboned.
Well, it was a hit. My boys are finishing off the last of the pot now (9:45 pm), except for the part I set aside for DH's lunch tomorrow, at work. He's lucky I got to it earlier, or he would be out of luck!
No recipe for the sole, it came oven-ready. Nothing special, anyway, the soup stole the show! Guess the fate of the rest of the beans is sealed.
BTW, yesterday, I spied two ripe blueberries on one of my blueberry bushes, the first of the season. So, they're on the way!
