Recipe(tried): Minestroni Broth

I have made a minestrone soup which I think is better than Olive Gardens. For the liguid I use about 3/4 can of veg. juice cocktail (cheap brand like V8) and a can of veg. broth (similar to chicken or beef broth)...more or less depending on amount being made. I also use red pepper to taste which gives it a deeeper flavor. Fresh basil is a great addition. I haven't ever put spinach in my soup but cut up fresh would be great.
