Recipe: Mini Loaf Pans are not created Equal (re: adapting recipes for mini loaf pans)

Hi Kate,

I bake a lot of mini stuff. My mini-loaf pans are 5.75 x 3 x 2-1/8. I know they have smaller ones all attached in one unit, these must be ultra-mini. I also have a very hot oven, so if I am making a quick bread recipe that says bake 50-60 minutes, I bake the mini-loaves for 40-45 min, checking at the 40 minute time period. If they've crested and appear done, I do my fork and spagetti test, and if they pass that test,they come out. I usually cool in the pan for 5-10 minutes and flip them out. To facilitate the flip-out process I always grease and flour my pans.

I don't bake much in the basic bread category, i.e. ww bread, cracked wheat bread, rye bread, etc. But I imagine, in this kind of bread knocking off 15-20 minutes would probably give you the same result.
