Recipe(tried): Mini-Ruebens and Mini-Grilled Cheese (hot appetizers)

OPEN FACE MINI-RUEBENS
Party loaf of that tiny, thin, dark rye bread
can of sauerkraut, drained
Pastrami or corned beef, sliced very thin
Swiss Cheese or grated Packaged Swiss Cheese
Thousand Island Dressing
Place the little slices of the dark rye bread on a cookie sheet. Layer from bottom up with first, Dressing, piece of pastrami or corned beef, topped with sauerkraut, topped with swiss cheese. Place in pre-heated 400 degree oven for about 10 minutes, until well heated through and cheese melted. Serve hot on pretty platter.
OVEN GRILLED MINI-CHEESE SANDWICHES
1 loaf of French baguette type bread, sliced into 1/4" rounds, very lightly buttered
garlic clove
Fontina Cheese slices
Pesto (good quality jarred type)
Roasted Red peppers (jarred)
First, place bread rounds on baking sheet in 425 degree oven, when slightly crisp, remove and rub garlic clove over lightly browned side. Then on softer side, place cheese, a couple of julienned strips of red roasted peppers, then smear soft side of other bread with pesto. Make into little sandwiches, pressing down on them, and return to oven for another 5 or 10 minutes, until crispy and golden brown.
Serve hot on nice platter. These are really delicious!
