Hi Regan,

Pecan Sandies would be a good substitute for the vanilla wafers in this recipe.

Miniature Cheesecakes

l2 vanilla wafers
2 8oz blocks of cream cheese
l/2 cup sugar
l tsp vanilla
2 eggs

Line muffin tins with FOIL liners (those that have foil cupcake cup with pastel liners are the best).

Place one vanilla wafer in each liner.

Mix cream cheese, vanilla & sugar on medium speed until well blended. Add eggs. Mix well. Pour over wafers filling about 3/4 full.

Bake at 325 degrees for 25 minutes. Remove from pan when cool.

Chill well. Top with favorite pie filling (blueberry,raspberry,etc).
Makes l2. ***these freeze well***
