MINIATURE SHOOFLY PIEs
3 1/2 cups flour, divided use
3 sticks (1 1/2) cups butter, softened
6 oz. cream cheese, softened
2 eggs
1 1/2 cups packed brown sugar
2 tablespoons melted butter
1/4 teaspoon vanilla
1 cup sugar
Combine 2 cups flour, softened butter and cream cheese to form a dough. Line miniature muffin tins with dough, pressing evenly around sides and bottom.
Combine eggs, brown sugar, 2 tablespoons melted butter and vanilla. Pour into pastry lined muffin tins.
Cut remaining butter and sugar into remaining flour. Sprinkle over filling in muffin tins.
Bake at 400 degrees F for 20 minutes.
