Recipe: Vegetable Rice Pilaf (serves 2)

VEGETABLE RICE PILAF

1/3 cup long-grain rice
1 tbsp finely chopped onion
3 tbsp butter
1 cup water
1 chicken bouillon cube
1/4 tsp salt
1 (8 oz) can mixed vegetables, drained

Cook rice and onion in butter 5-10 minutes or until lightly browned, stirring frequently.

Add 1 cup water, bouillon cube and 1/4 tsp salt. Bring to a boil, stirring to dissolve the cube. Reduce heat, cover and cook until liquid is absorbed and rice is tender and fluffy.

Stir in vegetables; heat through.

Servings: 2
